BLUEBERRY SYRUP

When it’s a pancake morning, my kids know that a fruit syrup will be simmering on the stove. The usual is blueberry but strawberry is another favorite. Try this with your favorite fruit!

When it’s a pancake morning, my kids know that a fruit syrup will be simmering on the stove. The usual is blueberry but strawberry is another favorite. Try this with your favorite fruit!

Ingredients

  • 2 cups frozen blueberries
  • 1 cup water, keep 1/4 cup reserved
  • 3/4 cup sugar
  • 1 tbsp cornstarch

Instructions

  1. Add the blueberries, 3/4 cup of water and sugar to a pot. Bring to a boil over medium heat and let it boil for 5 minutes. Mix cornstarch and remaining water in a small bowl with a fork. {This is called a slurry.} Turn the heat down to low. Wait until the blueberries stop boiling then stir in the slurry. Return berries to medium heat until they start to boil. Turn the heat off when syrup it just about as thick as you want it. It will continue to thicken as it sits.

Notes

This is also great as a flavored syrup for tea, shaved ice, or Italian sodas.
